Okra with lamb and rice with mixed nuts

Serves: 4

Ingredients

For the main dish:

  • 2 bags of frozen okra (500g each)
  • 1 kg of diced lamb
  • Ghee
  • Coriander seeds
  • Tomato paste
  • Lemon juice
  • Garlic
  • Onion
  • Oil
  • Salt & paper

For the rice:

  • 3 cups of rice
  • Thin noodles
  • Mixed nuts
  • Sultanas

Method

For the main dish:

  • Stir the frozen okra in little oil until warm
  • Melt the ghee in a saucepan and sauté the onion until soft, then add the garlic and season to taste with salt, pepper and coriander seeds
  • Fry for a couple of minutes then add the lamb and toss until sealed and lightly browned.
  • Add the tomato puree and paste. If more liquid is needed, add the stock or water. Cover and simmer for 30–35 minutes.
  • Add the okra and cook for another 5–10 minutes. Add the lemon juice and remove from the heat.

For the rice:

  • Heat some oil in a saucepan, add the thin noodles and cook until light brown.
  • Add the rice and cover with water.
  • In a frying pan heat the nuts and sultanas in 1 tbsp of oil until they change colour (don't burn it).
  • Serve as per the photo.
